2 tbsp Olive oil
1 Large Onion, finely chopped
1 Red bell pepper, diced
2 Cloves Garlic, minced
1 Can (400g) diced tomatoes
2 tbsp Dalia's Pantry Smoky Chipotle Harissa (adjust according to preference)
1 tsp ground cumin
1 tsp ground paprika
1/2 tsp ground coriander
Salt and pepper to taste
4 -6 eggs
Fresh coriander (for garnish)
Feta cheese
Crusty bread or pits bread, for serving

Instructions

Sauté onions, red bell pepper, and garlic in olive oil.
Add diced tomatoes, Dalia's Harissa, cumin, paprika, coriander, salt, and pepper. Simmer for 10-15 minutes.
Create wells in the sauce and crack eggs into them.
Poach the eggs for 5-7 minutes until desired consistency.
. Garnish with coriander and feta cheese
Serve with crusty bread or pita bread.
