Marry Me Smoky Harissa Tofu
Crispy pan-fried tofu in a creamy, garlicky sun-dried tomato sauce with a smoky kick from our Chipotle harissa. Serve over pasta, rice, or with crusty bread.
Ingredients
Tofu
- •400 g firm tofu, pressed and cut into cubes
- •2 tbsp cornflour
- •2 tbsp olive oil
Sauce
- •4 cloves garlic, minced
- •½ cup sun-dried tomatoes, chopped
- •1 tbsp Dalia's Pantry Smoky Chipotle Harissa
- •1 cup vegetable stock
- •1 cup coconut cream
- •⅓ cup nutritional yeast
- •1 tsp dried oregano
- •Salt & pepper, to taste
- •2 cups baby spinach
To garnish
- •Fresh basil leaves
Method
Press the tofu to remove excess moisture, then cut into cubes. Toss in cornflour to coat.
Heat the olive oil in a large pan over medium-high heat. Fry the tofu until golden and crispy on all sides, about 8-10 minutes. Remove and set aside.
In the same pan, sauté the garlic and sun-dried tomatoes for 1 minute until fragrant.
Stir in the harissa and cook for 30 seconds.
Add the stock and coconut cream, bring to a simmer. Stir in the nutritional yeast, oregano, salt, and pepper. Simmer for 3-4 minutes until slightly thickened.
Add the spinach and stir until wilted.
Return the tofu to the pan, coat well in the sauce, and simmer for another 2 minutes.
Garnish with fresh basil and serve over pasta, rice, or with crusty bread.
