Corn Fritters with Smoky Chipotle Harissa

These delicious corn fritters are crispy on the outside and tender on the inside, enhanced with a smoky kick from Smoky Chipotle Harissa. Perfect as an appetiser or a side dish, they are garnished with a dollop of sour cream or heavy cream for added richness.

2 cups corn (fresh, frozen, or canned, drained)
1/4 cup cornmeal
1/4 cup all-purpose flour
1 teaspoon smoked paprika
1 egg
1 green onion, chopped
1/2 cup grated Parmesan or cheese of your choice
1 handful cilantro, chopped
1 tablespoon lime juice
Salt and fresh cracked pepper to taste
1 tablespoon Smoky Chipotle Harissa (adjust to taste)
3 tablespoon oil (for frying)
Sour cream or heavy cream, for garnish

Instructions

Prepare the Batter

In a large bowl, combine the corn, cornmeal, flour, smoked paprika, egg, green onion, grated cheese, cilantro, lime juice, Smoky Chipotle Harissa, salt, and pepper.
Mix well until all ingredients are evenly incorporated.

Cook the Fritters

Heat the oil in a large skillet over medium-high heat.
Spoon about 2 tablespoons of the batter per fritter into the skillet, flattening them slightly with the back of the spoon.
Cook the fritters for 2-3 minutes on each side, or until golden brown and crispy.

Serve

Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil.
